Grilled Chicken Sandwiches with Basil Aioli
Serves 4
Ingredients:
- 2 Tbsp. Stater Bros. Markets Lite Mayonnaise
- 1 Tbsp. chopped fresh basil leaves
- 1 tsp. lemon juice
- 1 clove garlic
- 1 lb. boneless, skinless chicken cutlets
- 4 whole wheat rolls, halved horizontally
- 20 I Can’t Believe It’s Not Butter!® Original Butter Spray sprays
- 4 slices tomato, about 1/4 inch thick
- 4 slices thin red onion
- 4 lettuce leaves
Directions
Combine Light Mayonnaise, basil, lemon juice and garlic in small bowl; set aside.
Grill or broil chicken, turning once, 4 minutes or until chicken is thoroughly cooked.
Evenly spray cut-side of rolls with I Can’t Believe It’s Not Butter!® Spray Original and grill, pressing gently to sear, 1 minute or until rolls are toasted. Evenly spread rolls with basil mixture, then top with chicken, tomato, onion, and lettuce.
Cheesy Veggie Quesadillas
Serves 4
Ingredients
- 1 cup thinly sliced onion
- 1 large zucchini, sliced
- 1/8 tsp. salt
- 20 I Can’t Believe It’s Not Butter!® Original Butter Spray sprays
- 8 (6-in. ea.) low fat flour tortillas
- 2 cups shredded reduced fat cheddar cheese
- 1 cup finely chopped tomatoes
Directions
Preheat 10-inch nonstick skillet over medium-high heat. Add onion, zucchini and salt, then spray with I Can’t Believe It’s Not Butter!® Spray Original. Cook covered, stirring occasionally, 8 minutes or until tender.
Evenly divide onion mixture onto 4 tortillas, then evenly top each with cheese. Top with remaining tortillas.
Cook quesadillas in 12-inch skillet over medium-high heat, one at a time, turning once, 2 minutes or until cheese is melted. Cut into wedges and garnish with chopped tomatoes.
