Fish becomes very popular during Lent season for those participating. It’s the perfect protein alternative as its rich in nutrients and versatile. Lent Fridays shouldn’t mean you have to only eat fish, there’s multiple different options to choose from. Take this season to explore different food choices and flavors, from vegetables, grain, beans, and more. The following recipes are a delicious and easy way to find new meals for this Lent Season. 

Shredded Tofu Wraps

Enjoy a flavorful and plant-based meal with these Shredded Tofu Wraps. Packed with savory garlic and onion seasonings, smoky BBQ sauce, and fresh romaine, this easy-to-make dish is perfect for a quick lunch or dinner!

  • 1 pkg. House Foods Extra Firm Tofu, pressed
  • 2 tsp. Full Circle Market Organic Garlic Powder
  • 1 tsp. Full Circle Market Organic Onion Powder
  • 1 tsp. Stater Bros. Salt
  • ½ tsp. Full Circle Market Organic Ground Black Pepper
  • Stater Bros. Large Flour Tortillas
  • Kinder’s Gold BBQ Sauce
  • Stater Bros. Hearts of Romaine
  • Mezzetta Pickled Red Onions, optional
  1. Preheat oven to 400°F.
  2. Use a cheese grater to shred the tofu.
  3. Place shredded tofu on a parchment-lined baking sheet, drizzle with avocado oil, add garlic, onion, salt, and black pepper. Gently toss to coat.
  4. Bake for 15 to 20 minutes. Broil briefly if not browned enough.
  5. Add a scoop of tofu to the tortilla, drizzle with desired amount of BBQ sauce and add romaine and pickled red onion. Fold together and toast in a pan.

Potato Tacos

These crispy, golden Potato Tacos are a delicious and satisfying vegetarian option. With perfectly seasoned fried potatoes tucked into soft corn tortillas, they can be topped with your favorite garnishes like shredded cheese, lettuce, and salsa for a simple yet flavorful meal.

  • 1 ½ lbs. Russet Potatoes
  • 1 tsp. Full Circle Market Organic Garlic Powder
  • ½ tsp. Full Circle Market Organic Ground Black Pepper
  • 1 tsp. Stater Bros. Salt
  • Stater Bros. 6” Corn Tortillas
  • Stater Bros. Vegetable Oil for frying
  • Stater Bros. Shredded Lettuce (optional for garnish)
  • Stater Bros. Shredded Mild Cheddar Cheese (optional for garnish)
  • Stater Bros. Salsa (optional for garnish)
  • Cacique Cotija Cheese (optional for garnish)
  1. Peel and cube the potatoes. Add to a pot and cover with water. Bring to a boil then reduce to a medium-low simmer for about 15 minutes, or until potatoes are soft.
  2. Mash the potatoes with garlic, salt, and pepper.
  3. In a large skillet, heat a few tablespoons of oil over medium heat.
  4. Microwave a few tortillas at a time for about 1 minute, to make them pliable. Fill tortillas with a few tablespoons of mashed potatoes and fold in half.
  5. Fry tacos for 3 or 4 minutes on each side until golden brown.

One-Pot Broccoli Cheddar Soup

  • 2 tbsp. Stater Bros. Salted Butter
  • ½ Yellow Onion, diced
  • 2 Garlic Cloves, minced
  • 2 tbsp. Stater Bros. All Purpose Flour
  • 2 cups Full Circle Market Organic Vegetable Broth
  • ¼ tsp. Full Circle Market Paprika
  • Salt and Pepper to taste
  • 1 Large Carrot, shredded
  • 3 cups Broccoli, chopped to small florets
  • 2 cups Stater Bros. Mild Cheddar Cheese, shredded
  • 1 ½ cups Stater Bros. Heavy Whipping Cream
  1. In a large pot, melt butter and sauté onions for about 5 minutes.
  2. Add garlic and cook 1 minute.
  3. Add flour and stir.
  4. Add vegetable broth and seasonings.
  5. Add carrot and broccoli, cover and cook for 15 minutes.
  6. Add cheese and heavy cream. Stir until cheese is thoroughly melted. Taste for seasoning and add more salt and pepper if needed.

Watermelon Feta Salad

This refreshing Watermelon Feta Salad combines sweet watermelon and tangy feta with a vibrant vinaigrette, making it the perfect dish. It’s light, flavorful, and ideal for any occasion.

  • 1/3 cup Full Circle Market Olive Oil
  • 1 Lemon, juiced
  • ¼ cup Star Red Wine Vinegar
  • 1 Shallot, finely diced
  • 2 tbsp. Full Circle Market Honey
  • 1 tsp. Salt
  • ½ tsp. Black Pepper

Ingredients for Salad

  • 5 cups Watermelon, diced into ½ inch cubes
  • 5 oz. pkg. Full Circle Market Arugula or Salad Mix of choice
  • 6 oz. Culinary Tours Feta Cheese
  • ¼ cup Mint Leaves, julienned
  • 2 oz. Stater Bros. Sliced Almonds
  1. Prepare vinaigrette by combining olive oil, lemon juice, red wine vinegar, diced shallot, honey, salt, and pepper in a small bowl and whisk until thoroughly combined.
  2. In a large bowl combine diced watermelon, salad mix, feta, mint, and almonds. Add vinaigrette and toss to combine.

Boursin Mashed Potatoes

These Boursin Mashed Potatoes are a creamy, flavorful twist on a classic side dish. The rich combination of butter, heavy cream, and Boursin Garlic & Fine Herbs Cheese creates a velvety texture with a delightful garlic-infused taste, making these mashed potatoes a perfect accompaniment to any meal.

  • 8 to 10 Medium Russet Potatoes
  • 1 stick Stater Bros. Salted Butter
  • ½ to ¾ cup Stater Bros. Heavy Whipping Cream
  • 1 to 2 tsp. Better Than Bouillon Roasted Garlic Base
  • 5.2 oz. pkg. Boursin Garlic & Fine Herbs Cheese
  • Salt and Pepper to taste
  1. Peel, cube and boil potatoes until tender. Drain and set aside.
  2. In a medium saucepan, melt butter then add heavy cream and garlic base. Cook until heated through. Pour over potatoes, add cheese and mash until smooth. Season to taste with salt and pepper.
